A BLEND OF VEGETABLE FIBRES TO REDUCE THE USE OF SUGAR IN DESSERTS AND ICE-CREAMS
Reducing our daily consumption of sugar is a must, according to the World Health Organisation: the recommended limit for adults is 25 grammes, and for children just 20 grammes. And the reason? To prevent tooth decay, combat obesity and reduce the risk of cardiovascular problems and cancer.
The food industry, and the sweet sector in particular, has recognised the need and the opportunity to market ingredients and finished products which can completely or partially replace sugar.
Here at Inovafood – a leading company in food innovation and the development of food products and technologies – we’ve found the answer to this need, developing a blend of vegetable fibres in liquid form which allows the sugar used in any recipe to be reduced by 40%.
It’s a vegan product, for use in recipes geared to consumers who care about their health and those with dietary intolerances; it contains no allergens or their derivatives.
The blend can be used in pastry-making or ice-cream, and immediately after its launch it was bought by a well-known Veneto company which seeks to offer its partners and clients products with a low GI index but plenty of flavour.
