In response to the demands of an increasingly educated and informed public, we were commissioned by a Veneto food company to carry out research and development on an innovative product: a probiotic yogurt ice cream.
The development of a food that tastes delicious and at the same time aims to enhance consumer health necessitated collaboration with Synbiotec Laboratories, a spin-off of Unicam – Camerino University and a leading research centre in the field of health and the intestinal microflora.
This research led to the development of FlorasynTM, a liophilised compound of 2 strains of probiotic bacteria of human origin – Lactobacillus rhamnosus IMC 50® and Lactobacillus paracasei IMC 502® – which could be added to the dietary products marketed by the commissioning firm, giving them the content of 1 billion microorganisms per 100 grammes of finished product.
The synthesised bacterial strains are able to withstand gastric acid and the alkali of bile secretions, arriving in the intestine alive and in sufficient quantity to balance the microflora, responsible for the functioning of the digestive system and useful in the development and function of the immune system.
